Inspired by McDonald’s Chicken McNuggets dipped in sweet-and-sour sauce a classic combination that debuted nationwide in 1983 this tofu appetizer gets its inexorable crunch from potato starch. ![]() ![]() Drizzle with the sesame oil, and add more soy sauce as desired. Using tongs, transfer the spinach and tofu mixture to a serving bowl, leaving the liquid behind in the pan or wok. Stir in the sesame seeds, and add more soy sauce to taste. Cut the tofu into 1-inch pieces and toss in the pan to coat with sauce. Add the spinach and stir-fry until the spinach wilts, about one minute. Simmer, stirring frequently until the sauce reduces and its color deepens to a dark brown, about 6 to 8 minutes. Pour in the coconut milk, soy sauce and brown sugar. Next, heat the remaining 1 tablespoon oil and add the ginger and garlic. Place the drained tofu in the pan and sear without moving until tofu is browned and golden on both sides, turning once halfway through, about 8 minutes total. Add the oil, turn the heat to medium-high and add the peppers. Returning to the same sauté pan, heat 1 tablespoon canola oil to hot. Heat a large nonstick skillet or wok over high heat until a drop of water evaporates on contact. You’ll want the tofu to be a dry as possible. Slice the tofu in half horizontally, and place on paper towels to dry any excess liquid. I’m just serving myself and my skipper tonight so I’m using only half of the tofu. Toss the snap peas with the rice vinegar, scallions, mint and red-pepper flakes, if using. Add the snap peas and sauté, stirring occasionally, until blistered and just tender, about 3 minutes. In your favorite large sauté pan, add 1 tablespoon canola oil and heat to high.
